What is the difference between the ST and RS sprint models? 
-If I remember correctly the RS was setup to be bit sportier.  Slightly different riding position as the RS has lower handlebars, higher mounted footpegs with the half fairing.  You lose the single sided swingarm with either a longer shock or longer linkage to raise the tail end to give it a more sporty handling.  The ST is setup for long distance, more relaxed ergos with luggage.

For the most part, the engines are bullet proof but make sure they have had the 12/24/36/48k or whatever mileage service, if everything looks good at the service check, it should be good to go.

I rode mine in Phoenix year round for 5 years and only had issues with heat in the summer sitting in traffic. The fan would run some if I was riding but when its 110 outside, what can you do. When I bought the bike, the previous owner was using regular 20-50 motorcycle oil and I kept using it. I would have to top it off about every 500 miles.  I switched back to 20-50 synthetic and never had to top it off again with an oil change every spring which usually worked out to about every 3000 to 4000 miles. The plastic fuel tank fittings did fall apart but Triumph USA paid for the repair out of warranty. The front brake is a little soft.  I am told it is because Triumph used a horse shoe shaped fitting to connect the right front brake line to the left front brake line and it can trap air.  Changing the fitting to a Y shape or just running a separate brake line from the master cylinder to each front caliper fixes the issue. I found the front forks to be a bit mushy and had Racetech springs installed.

I have bar risers fitted with fatter grips with no bar end weights and really have no issues with handlebar vibration.  I put 42,000 miles on the bike and with the exception of the fuel tank fittings and front fork seals, no issues and never left me stranded.
