Chris,
Nothing really formal for friday, not that there is really an part of the event that is "formal."
On Friday, people who arrived on Thursday often ride during the day. Friday night people kind of do their own thing for dinner in smaller groups. Chat and socializing afterward until the hotel shuts it down :)
Saturday, folks generally tend to break into groups for rides and destinations that interest them. Saturday night is the BBQ Meet and Greet.
Sunday is again causal for those who are hanging around Taos until Monday.
It is pretty much of a low key event. Meet some new friends, spend time with some old ones, ride and enjoy the weather and scenery. I think the general informality of the event is a good part of its appeal.
