Toast has been there for at least 5 years, maybe longer. Good food, but the parking lot is small and so is the restaurant. Both parking and seating can be difficult.
NoNo’s is also an option over by Grand Prix, speaking of creole style and beignets :)

The Old Mill brewery in old town Littleton has a decent breakfast menu and they don't tend to get very busy. Just some ideas for you.
